Intern Testimonial by Scott Brent, (K'16): "As a marketing intern at Creative Dining, I was asked to pick up a Community Supported Agriculture (CSA) package from one of the local farms in the Kalamazoo area.  My assignment was to create two recipes from asparagus, cucumber, tomato, potatoes and apples.  I was shocked at how many possible dishes could have been created from a few ingredients.  After creating both a roasted asparagus and cherry tomato salad, paired with a cucumber apple smoothie, I developed a greater appreciation from where food comes from and how to use it in a sustainable manner."


Kalamazoo College Dining encourages students to learn about how they can obtain food in a sustainable manner.  Over the past year, we have offered them the chance to forage for local ingredients with Bonamego Farms, as well as helped them cook dishes that are both delicious and convenient.  Although great tasting food is our passion, Kalamazoo College Dining Services is committed to purchasing and tracking local products grown or produced within a 150-mile radius of Kalamazoo, Michigan.  As a service that is dedicated to their student diners, we constantly buy and reuse compostable disposables, take water and energy saving measures throughout the food service operation and participate in the campus recycling and composting programs.
