Zucchini Bounty

With over 30 zucchini plants in the garden this year, it's time to review all the many ways to use zucchini:

Health.com has 26 recipes that use zucchini including:

  • zucchini fries 
  • zucchini & rosemary frittata with parmesan 
  • grilled zucchini with parmesan pesto

Mother Earth News also has 20 ways to use zucchini:

  • from the simple - steam as a side dish to
  • the more complex:"Slice squash in half lengthwise, scoop out enough of the seed mass to make room for filling (the scooped flesh can be added to — you guessed it! — anything else), then stuff the “shells” with breadcrumbs, cheese, herbs and cooked rice, beans or meat. Bake at 375 degrees for 30 to 40 minutes."
  • to the unusual: "Add grated zucchini to any cake batter for extra moisture."

I've made zucchini chocolate cake for years and it is a wonderful, moist, flavorful cake. The other thing I tried last year was zucchini ginger preserve - great on toast!
